Pathiri: The Quintessential Malabar Dish

If someone was told to represent the Malabar region of Kerala as a dish, then pathiri would be the answer. 

Pathiri is something that is very dear to the Malabar people . It is said that this delicious dish is handed out to the southern state of India from the Arabs. 

Even the origin of the word pathiri is found in the Arab language meaning ’ pastry’. When there is a gathering or a party in these regions, pathiri is a must, which shows the hard work of the cook.

Pathiri is also regularly eaten in Malabar regions in the month of Ramadan. After breaking the fast, eating pathiri with roasted coconut chicken curry is the norm.

Nowadays Pathiri has become a common dish across Kerala, enjoyed by people of all demographics. The dish is also known as Rice Pathiri or Nice Pathiri.

Ingredients and preparation

Pathiri uses simple ingredients like rice flour, water and salt. The hardest part comes when it is time for the kneading. To prepare soft and round pathiri, you need to pour rice flour into hot boiling water which is seasoned with salt. After cooking the dough for a few seconds and letting it rest, you need to knead the rice dough so thoroughly that the stickiness is gone. All of the kneading must be done when the dough is still warm, otherwise, you won’t get the perfect, round and soft pathiri.

Finally, you can make a small ball out of the dough and roll them to round shapes. These are then placed on a hot Tawa to get the puffed up pathiri. At Incredible Foods, we use a mix of man and machine to produce tasty and high-quality pathiri.
