Porota is mostly enjoyed in southern states of India but due to immigration of Tamils to Sri Lanka, you can find porota in the local stalls of the streets of Sri Lanka.

Porotta is commonly made with maida ( all-purpose flour), water, salt and oil or ghee. The making of porota needs hands which can both wrestle furiously and cut delicately. Here, after mixing all the ingredients together, the dough is kneaded, pulled and punched until the chef finds it satisfactory.
This cannot be replaced by any machine and requires the hands of a porota making expert. After the kneading, the dough is split and spun into the air until it is thin and flat as possible. After which it is sliced into thin sections and combined together to form a circular shape. At last, porotta is placed on a hot Tawa or fry pan. Now you get the perfect layered, almost flaky porotas.
Parotta is so versatile that it can be used with any curry and gravy you can imagine. You don’t even need a curry to enjoy parotta as it can be eaten with a simple cup of black tea.
